Tray Baked Chicken with Olives and White Sweet Potato


500g Ethical Farmers pasture raised chicken thighs
400g sweet potato cut into wedges (we used white with the purple skin but orange or even normal potatoes would be great in here too) 
1 red onion cut into 8 wedges
2 garlic cloves crushed or finely sliced
16 olives (we used a combination of Sicilian and Kalamata)
1 tsp each of dried parsley, oregano, mint & dill
1 tsp finely grated lemon rind 
1 tsp salt 
1/2 tsp pepper 
4 tbs olive oil 
Juice of a lemon 


  1. Combine the garlic, herbs, lemon rind, salt, pepper, olive oil & lemon juice
  2. Coat chicken & sweet potato in herb mix, lay out on tray 
  3. Place onion wedges and olives on tray, pour over any leftover liquid
  4. Bake in 220 degree oven for about 30 mins.


Serve with fresh parsley, and a simple green salad with a squeeze of lemon.
