Meat box 4: Crispy pork crackling
Fail safe crispy pork crackling to go with Texas pulled pork shoulder or as a delicious snack in its own right starring pasture raised pork, locally farmed in NSW.
900g Ethical Farmers pasture raised pork crackling
- Lay the pork on a rack with a baking tray underneath, season with salt making sure you rub into the top and bottom of the rind and let it sit for an hour. Rinse and repeat for a second hour.
- Pre-heat your oven to 200c, place the pork skin side up in the oven for 30-45 min or until golden brown and bubbly.
- Remove from the oven and stand to cool, cut into strips or break into smaller pieces and enjoy!
