Roast lamb cumin & chilli spice rub

Ethical Farmers lamb roasts like our shoulder or leg is a great cut for this tasty rub. You could also use it as a quick cook rub for lam chops. The rub takes moments to put together and serves as the perfect year round recipe that pairs well with light and bright salad sides as well as more comforting carbs and roasty things when it's wet or cold outside. 

If possible, remove lamb from fridge 30-60 mins before cooking allow the lamb to absorb some of the rub.


1 lamb roast of your choice

2 tsp olive oil or ghee 

Spice rub  

2 tbsp cumin 

1 tsp chilli flakes or powder 

1 tsp salt 

1/2 tsp pepper 



  1. Mix the spices in a bowl and set aside. 
  2. Rub the olive oil or ghee onto the lamb and follow with the spice rub. Make sure the roast is covered all over—you may have leftovers depending on the size of the roast.
  3. Roast + rest the lamb for 5 mins before serving.
